Mac's Bachelor's Fish Chowder

Here is the all time favourite both in terms of being classic bachelor food -- ie easy -- and also tasty. Mac's British Columbia's Bachelor's Fish Chowder

As it happens I had a Tamil and a Sindhi Hindu living with me for several months earlier this year while I had a crippled hand; but it worked out very well, as they did all the cooking under my direction so they learned to cook and I didn't starve. And their families back home are delighted -- the routine most evenings was that they'd get on the phone (to Singapore) or email (to Bombay) to relay the latest recipes to their Mums and Dads. So I presume the ingredients are available. Here is the all time favourite both in terms of being classic bachelor food -- ie easy -- and also tasty. :

British Columbia Fish Chowder

Peel and chop some firm potatoes and parboil them. Pour off about half the water till what is left in the pot is slushy. Add some chopped onions and cook for a few minutes more. Throw in a tablespoonful or so of rice. Add some chopped up white fish with dill and salt and pepper; cook slowly for about 5 minutes. Add butter and 2 or so cups of milk. Heat to the simmer point but not to the boil. Remove from the heat and serve with a whoosh of Parmesan cheese if you like it and not if you don't. It's much better 
the second day and I like it cold, like Vichysoise.
